When fresh tomatoes and basil are in season, there is nothing better than a Caprese Salad. I had hoped to have fresh mozzarella to use for this years first Caprese, but instead, I used the ricotta and it was just as heavenly! Here’s the “recipe”.
Easy Caprese Salad
1 plate of Tomato Slices
Fresh Mozzarella slices [...]

HandyMan volunteers as an assistant coach with our local high school soccer team and pre-season practices start this week. Since HandyMan is not too far removed from those he is coaching, he comes home with the appetite similar to that team members. So for soccer season, I make sure to have lots of dense snacks [...]

I’m always looking for easy recipes that present themselves as a more laborious dish than they really are. In the summer, the less time in the oven or at the stove the better. This fantastic Peanut Butter Cup pie is tweaked from a recipe used at Sonlight Camp, where HandyMan and I have spent some [...]

I try to keep the sugar down in my recipes and combining equal parts of fruit and sugar just seemed, [...]

Yesterday most of the country celebrated Father’s Day. Since HandyMan works on Sundays and has Monday’s off , we celebrated Father’s Day Monday this morning. We went strawberry picking yesterday and today we had Strawberry & Cream Cheese Crepes. I used this recipe for the crepes.
As the second side of the crepe was cooking, [...]

After cruising some of my favorite recipe sites yesterday looking for a good bar recipe that would use up something – anything – from the freezer, I came up with this recipe for Cranberry Bars. I didn’t have all the ingredients, so I modified. I doubled it and it worked wonderfully in a [...]

I’m working on cleaning out the freezer before our summer produce moves into it’s winter digs. While sorting through stuff I came across some baby food that I had made for GBaby a while back and never used. The veggies I’ve hidden neatly in things like the HV Blueberry Bread and the HV Zucchini Bread. [...]

HandyMan is out of town this week, which means my breaks to be online are limited to when the adorable girl pictured to the right, decides to take a nap.
Yesterday I made a batch of the Cheese Soufflé that I posted about a while back and they are still oh-so-yummy! I modified this time around and [...]
